The first is right out of Cooking Light magazine, so if you follow the directions as they have them, you get a tasty meal for under 400 calories a serving.

Easy Ravioli Lasagna Recipe

Ingredients

Cooking spray
4 ounces hot or mild pork Italian sausage
4 ounces 90% lean ground sirloin
4 garlic cloves, minced
2 cups lower-sodium marinara sauce
1/8 teaspoon kosher salt
1/4 teaspoon crushed red pepper
1 (22-ounce) bag frozen whole-wheat spinach and cheese ravioli
3 ounces part-skim mozzarella cheese, shredded (about 3/4 cup)
1 ounce Parmigiano-Reggiano cheese, grated (about 1/4 cup)
Preparation

1. Preheat oven to 375°.
2. Heat a large skillet over medium-high heat. Coat pan with cooking spray. Add sausage, beef, and garlic; cook 4 minutes or until meat is browned, stirring frequently to crumble. Stir in marinara sauce, salt, and pepper; bring just to a simmer. Remove from heat. Stir in frozen ravioli; toss to combine.
3. Coat an 8-inch square broiler-safe glass or ceramic baking dish with cooking spray. Spoon ravioli mixture into pan; top evenly with mozzarella cheese. Cover dish tightly with foil coated with cooking spray. Bake at 375° for 40 minutes. Uncover and sprinkle evenly with Parmigiano-Reggiano cheese.
4. Preheat broiler (leave dish in oven). Broil 3 minutes or until cheese is bubbly and lightly browned.

The other is an easy (but not QUITE as healthy) breakfast “pizza”. If you sub reduced-fat cheese, Canadian Bacon or turkey bacon & Egg Beaters, you can save some calories.

Ingredients:
30-oz. tater tots
2 cups cheddar cheese, shredded
½ cups cooked bacon, crumbled
6 eggs
Sriracha
Salt
Pepper

Directions:
Preheat oven to 425°F.
Spray a cast iron skillet with cooking spray, coating the bottom and the sides.
Line the bottom and the sides of the cast iron skillet with tater tots.
Bake at 425°F for 15 minutes or until golden brown.
While the tater tots are in the oven, crack the eggs into a bowl and mix together.
Pour the whisked eggs into a pan and scramble. Add a pinch of salt and pepper.
Remove the skillet from the oven and press down on the tater tots with a spatula to create a firm bottom.
Top the tater tots with 1 cup of cheese.
Add the scrambled eggs, and top with 1 cup of cheese.
Press down with the spatula once more, and top with crumbled bacon.
Place back into the oven for 10 minutes.
Once cool, slice and serve. Drizzle with Sriracha for some spice, or with maple syrup for some sweet.
