Well, it’s another milestone in my house. Meredith got her driver’s permit yesterday. Yikes! So, my youngest child can now legally get behind the wheel of a car.
Rode with her for a short jaunt to her school & she didn’t do too bad. A little jerky on the brakes but I never soiled myself, so that’s a plus.
I’m looking forward to the Superbowl this weekend. Not because I particularly love either of the teams, I just love football. Off-season is tough because I really don’t follow any other sport. If you’re going to a party & want to do something besides the usual chips, dip & junk & you have a little ability to cook, here’s one of my favorite snacks to bring to a party:
Steak Bites With Bloody Mary Dipping Sauce
1 tablespoon extra virgin olive oil (plus extra for drizzling) 2 teaspoons hot pepper sauce (or more to taste)
1 small onion, chopped 1 cup tomato sauce
1/2 cup vodka 1 rounded tablespoon of prepared horseradish
2 tablespoons Worcestershire sauce Kosher salt & ground pepper
1 1/3 pounds beef (sirloin is good but you can go fancier if you want) cut into bite-sized pieces
Steak seasoning blend
Heat a small saucepan over medium heat. Add oil & onions & saute’ 5 minutes. Add vodka & boil to reduce by half. Add Worcestershire,
hot sauce, tomato sauce & horseradish. Stir to combine & return to simmer. Add salt & pepper to taste.
Heat nonstick skillet over high heat. Coat meat bites lightly in oil, season with steak blend and cook until meat is carmelized all over (about 2 minutes a side).
Put the sauce in a bowl on the center of a platter & surround it with the meat bites. (Don’t forget some toothpicks or skewers for serving!)
